A la recherche de nouveaux produits au caramel breton, je suis partie visiter l&rsquo;atelier de L&rsquo;Ambr1 situ\u00e9 \u00e0 Minihy-Tr\u00e9guier et, apr\u00e8s d\u00e9gustation, j&rsquo;ai \u00e9t\u00e9 vraiment conquise par la qualit\u00e9 de leurs produits et la richesse des saveurs.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">Pour rappel, L&rsquo;Ambr&rsquo;1 est une\u00a0marque\u00a0de bonbons et de cr\u00e8mes au caramel au beurre sal\u00e9 fabriqu\u00e9s par\u00a0Nicolas et Caroline Hubert, 2 anciens chefs\u00a0p\u00e2tissiers de grands restaurants. Dans la continuit\u00e9 de leur m\u00e9tier de base,\u00a0ils ont lanc\u00e9 leur propre gamme de caramels en y apportant leur petite touche d&rsquo;originalit\u00e9 et en privil\u00e9giant des ingr\u00e9dients hauts de gamme :<\/p>\n<ul style=\"text-align: justify;\">\n<li>Ils utilisent du <strong>beurre Bordier<\/strong> pour r\u00e9aliser leurs bonbons, un beurre hautement r\u00e9put\u00e9 utilis\u00e9 par les plus grands chefs cuisiniers fabriqu\u00e9 \u00e0 2 pas de Rennes.<\/li>\n<li>Ils fabriquent \u00e9galement leurs confiseries avec de la <strong>nacre de sel de Millac<\/strong> r\u00e9colt\u00e9e \u00e0 la main dans les marais salants\u00a0en Loire-Atlantique.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">En tout cas, cette jolie mise en avant de leurs produits m&rsquo;a donn\u00e9 envie d&rsquo;en savoir plus sur la fabrication du caramel de ces 2 cr\u00e9ateurs et notamment de leurs bonbons. Je me suis donc rendue dans leur petit atelier tr\u00e8s convivial, et on est bien loin des grandes usines et du brouhaha incessant des machines. Ici, <span style=\"text-decoration: underline;\">ils cuisinent\u00a0la base de leurs caramels eux-m\u00eame<\/span>, dans leurs grandes casseroles : ils ajoutent du sucre qu&rsquo;ils font cuire \u00e0 sec sans eau (comme le veut la r\u00e8gle de tout bon caramel au beurre sal\u00e9), de la cr\u00e8me, du beurre demi-sel et du sirop de glucose de bl\u00e9 naturel.<\/p>\n<p style=\"text-align: justify;\">Le caramel repose ensuite quelques heures et ils s&rsquo;attaquent ensuite \u00e0 la mise en forme des bonbons : le caramel est \u00e9tal\u00e9 puis pr\u00e9d\u00e9coup\u00e9 en cubes.\u00a0Maintenant il faut emballer les bonbons : pour cela, ils doivent\u00a0passer les cubes <span style=\"text-decoration: underline;\">un par un<\/span> \u00e0 la main dans une \u00e9trange machine assez ancienne (un mod\u00e8le rare qui \u00e9tait utilis\u00e9 dans le temps par les confiseurs et dont il ne reste que quelques exemplaires en France aujourd&rsquo;hui). Les bonbons sont <span style=\"text-decoration: underline;\">emball\u00e9s \u00e0 froid<\/span> dans cette machine, je me suis forc\u00e9ment demand\u00e9e pourquoi la temp\u00e9rature avait autant d&rsquo;importance lors de cette \u00e9tape et Caroline m&rsquo;a expliqu\u00e9 que bien souvent l&#8217;emballage alt\u00e9rait la saveur du caramel au beurre sal\u00e9 et que l&#8217;emballage \u00e0 froid permettait de pr\u00e9server tous les ar\u00f4mes du bonbon sans avoir aucun arri\u00e8re-go\u00fbt du papier.<\/p>\n<p style=\"text-align: justify;\">Derni\u00e8re \u00e9tape : <span style=\"text-decoration: underline;\">le tri<\/span>, une histoire de patience ! Tous les bonbons difformes et peu esth\u00e9tiques sont mis de c\u00f4t\u00e9 pour n&rsquo;avoir que de jolis bonbons pr\u00eats \u00e0 \u00eatre empaquet\u00e9s.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><strong>Place \u00e0 la d\u00e9gustation :<\/strong> et bien je peux le dire honn\u00eatement, leurs bonbons tiennent leurs promesses ! Un bon go\u00fbt de beurre, une pointe de sel qui parfume tout le bonbon, une texture tr\u00e8s tendre, en gourmande que je suis j&rsquo;ai vraiment ador\u00e9 !<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">Pour ce qui est des cr\u00e8mes de caramel au beurre sal\u00e9, la pr\u00e9paration est tout aussi pr\u00e9cise et m\u00e9ticuleuse.
